Meg started to make this amazing sweet potato casserole when we were in medical school. I ADORED it. I am biased to say that the pecan and brown sugar topping is the best way to serve it. The crunch is too good to be true.
Here's recipe I have adapted from My Darling Vegan's Classic Vegan Sweet Potato Casserole.

Meg's Sweet Potato Casserole
Ingredients for Sweet Potato Mash:
5 large sweet potatoes, peeled and cubed (about 10 cups)
1 cup unsweetened vanilla almond milk
1/2 cup dark brown sugar
4 Tbsp unsalted butter, melted
2 tsp vanilla extract
1 Tbsp cinnamon
1/2 tsp nutmeg
1 teaspoon salt
Ingredients for Pecan Topping:
1 1/2 cups raw chopped pecans
1/2 cup all- purpose flour
1/2 cup dark brown sugar
1 tsp cinnamon
1/2 tsp salt
4 Tbsp unsalted butter, melted
Directions:
Preheat oven to 350 degrees F.
In a large pot, cover the chopped potatoes with water. Bring water to rolling boil with lid on. Boil for 2 minutes. Then turn off heat and let potatoes sit for 30 minutes, covered. Potatoes are done when a fork can easily poke through the center.
Drain the potatoes and set aside for 10 minutes to let cool.
Using a large potato ricer, press the potatoes into a large bowl.
Gently fold in the the almond milk, brown sugar, melted butter, vanilla, cinnamon, and nutmeg until well combined. (Use measurements mentioned in "mash" ingredients above.)
Spread the mash evenly along a 13x9 casserole dish.
In a separate small bowl, combine the pecans, flour, brown sugar, cinnamon, salt, and melted butter. (Use measurements mentioned in "topping" ingredients above.)
Sprinkle topping evenly over the mash.
Bake uncovered for 25 minutes.
Remove from oven and let cool for 10 minutes before serving.
This dish can also be made ahead of time and reheated the day of an event to make things easier. These slow cookers are also perfect for reheating at a party!
I would also recommend using a potato ricer like this one. It twists and makes things so much easier on the wrists!
