This morning my roommate called me a "granola making machine". Honestly, it is very true! I have been making so much granola lately. It is so fun and easy. Just last week I posted a recipe for Orange Almond Granola. Now I am quickly following it up with a new granola recipe for those CHOCOLATE LOVERS 🍫 out there!

My mom and sister are two of those chocolate lovers! Last weekend, I sent my mom a small batch of this granola I had been working on. The next day I got a text to say how much she loved it on top of her Greek yogurt! That was my cue that I should make more for her and my sister. I have impressed my chocolate critics! 🥰 I am so honored!
This granola was inspired by my sister's love for Almond Joys. The recipe has the three iconic candy bar ingredients... ALMONDS, CHOCOLATE, and COCONUT! It is such a great combination. Sweet and crunchy! Yum!
In this recipe, I call for semi-sweet chocolate chips. However, I sometimes like to substitute the chocolate chips with Toll House Espresso Morsels. I have only been able to find these from Target and Amazon. They are so yummy! The coffee flavor is not very strong, but is definitely present. Since these morsels only come in a full size chip, I chop them up before adding them to my granola.
This recipe was adapted from Cookie + Kate's Healthy Granola Recipe. I love her blog so much. She has such good recipes featuring fresh and whole foods.
So try this granola out. Eat it how you like it! Leave it in larger chunks to snack on, add it to your bowl of yogurt, top it on smoothie bowl, or pour it over a cold bowl of almond milk. It goes great with a nice cup of morning coffee or chai tea latte. Enjoy!

Almond, Chocolate, & Coconut Granola
Ingredients:
4 cups old fashioned oats
1 teaspoon salt
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 cup canola oil
1/2 cup honey or maple syrup
3/4 cup unsweetened coconut flakes
1/2 cup semi sweet chocolate chips, chopped
1/2 cup roasted almonds, chopped
Directions:
In a large bowl, combine oats, salt, cinnamon, and vanilla.
Add canola oil, honey, and coconut. Still until mixture is completely wet.
Line two large baking pans with parchment paper. Divide mixture between two pans and spread out evenly.
Bake at 350 degrees for 10 minutes. Remove from oven and toss granola on warm baking sheet. Place back in oven for another 10 minutes. It will be golden brown around the edges when done.
Remove from oven and let cool completely.
Add chocolate chips and almonds. (Adding them before granola has cooled will melt the chocolate chips.)
Break into chunks and store in an air-tight container.
